Breakfast Stuffed Peppers

Breakfast Stuffed PeppersMouthwatering  stuffed peppers for breakfast (or any time, in my opinion!

Simplicity at its best:

Spinach, seasoning, and a 3-1 egg white, whole egg ratio.

Cook at 375 for 45 min

Variety abounds!

 Think of the options:

Vary the seasonings –a little spanish flavor? (try cumin, chili powder)  Italian? (oregano, thyme,) or maybe Mediterranean? (basil,  rosemary)

Add tomatoes and maybe some mozzarella and basil (classic Margherita); or mozzarella & pepperoni (Italian), jalepenos and cheddar  (Mexican) or olives, mushrooms, and artichoke hearts (Mediterranean)

Anyway you mix it , these are great for brunch, breakfast on the run, or evening supper!
