Mozzarella and Roasted Cherry Tomato Salad – Blog – food52.
Doesn’t this just look scrumptious? This is an interesting ‘tweak’ to the traditional (and one of my favorites ) Caprese Salad.
Read some of the comments following the recipe for other intriguing variations such asĀ using mozzarella ‘balls’ or adding a drop of balsamic or sherry vinegar.
Anyway you choose, it is sure to be delicious!

All I can say is Wow! And just in time for my “Sweet Baby Girl” cherry tomatoes that are coming on! I’m wondering if Provolone would also work – I love that cheese with tomatoes and basil. Although I know that Mozzarella is specifically made to melt and be gooey!
Try it and let us know! — Provolone would be an interesting flavor twist and this isn’t melted (although it looks to be in the picture). The key is the roasted (or pan-seared/glazed) cherry tomatoes!
Made this as a pizza topping using a lavosh type flatbread as a crust, topped with mozzarella slices which melted slightly on the warm toasted crust, then covered with the hot-out-of-the-oven roasted tomatoes…back into the oven for a few minutes to finish melting the cheese – Yummy! Less oil next time, though. I think I will just drizzle the tomatoes with oil. Still….such amazing flavors and sooo good!
